Make these incredibly easy, buttery cookies using only three basic ingredients. They bake quickly and deliver a rich, melt-in-your-mouth texture perfect for tea time or a fast dessert.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and powdered sugar together until the mixture is light and fluffy. You can use a hand mixer or a sturdy spoon.
  3. Gradually add the flour to the butter mixture, mixing on low speed or by hand until a soft dough forms. Do not overmix the dough.
  4. Shape the dough into small balls or logs, or press it into a baking dish to create a sheet of shortbread. If you prefer defined shapes, chill the dough for 15 minutes before rolling and cutting.
  5. Place the cookies on the prepared baking sheets, leaving about 1 inch between them. You can gently press the tops with a fork if desired.
  6. Bake for 10 to 15 minutes, or until the edges are just beginning to turn light golden brown. These cookies brown slowly.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer flavor, use high-quality butter.
  • If you want a slightly crispier cookie, bake for an extra minute or two, watching carefully to prevent burning.
  • These are naturally no egg butter cookies, making them very simple.
  • Dust with extra powdered sugar after cooling for presentation.
