Make this impressive appetizer quickly in your air fryer. You get perfectly melted brie inside a golden, flaky puff pastry shell.

  • 1 (8 ounce) wheel of brie cheese, cold
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon water
  • Optional: 2 tablespoons jam or honey for topping

Instructions

  1. Remove the rind from the top and bottom of the brie wheel if you prefer a smoother melt, or leave it on for structure. Chill the brie until very firm.
  2. Lightly flour your work surface. Unfold the thawed puff pastry sheet. Cut the sheet into a square large enough to fully enclose the brie wheel.
  3. Place the cold brie wheel in the center of the pastry. Bring the edges of the pastry up and over the brie, meeting in the center. Trim any excess pastry, leaving just enough to seal the edges completely.
  4. Pinch the seams firmly to seal the pastry around the cheese. Flip the package over so the seam side is down. Gently press the edges to ensure a tight seal; this prevents leaks.
  5. In a small bowl, whisk the egg with 1 tablespoon of water to create an egg wash. Brush the entire surface of the pastry package evenly with the egg wash.
  6. Preheat your air fryer to 375 degrees Fahrenheit (190 degrees Celsius) for 3 minutes.
  7. Carefully place the wrapped brie into the air fryer basket, seam-side down.
  8. Air fry for 10 to 14 minutes. Check at 10 minutes; the pastry should be deep golden brown and puffed. If it is not brown enough, continue cooking in 2-minute increments.
  9. Remove the Air Fryer Baked Brie from the basket. Let it rest on a cutting board for 5 minutes before slicing.
  10. Serve warm, topped with jam or honey if desired.

Notes

  • Use a small wheel of brie (6 to 8 ounces) for best results in most air fryer baskets.
  • If the pastry starts browning too quickly before the cheese is fully melted, lightly tent the top with aluminum foil for the last few minutes of cooking.
  • For a sweet and savory appetizer, sprinkle the top with chopped pecans or a pinch of flaky sea salt before baking.
  • Do not skip chilling the brie before wrapping; cold cheese helps prevent the pastry from sticking to it during the initial heating phase.
