Make a complete, flavorful Greek dinner in one basket using your air fryer. This recipe delivers moist lemon-oregano chicken alongside crispy potatoes for a quick weeknight meal.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
  • 1.5 lbs Yukon Gold or red potatoes, quartered
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika

Instructions

  1. In a large bowl, combine the olive oil, minced garlic, lemon juice, oregano, salt, pepper, thyme, and paprika to make the marinade.
  2. Add the cut potatoes and chicken pieces to the marinade. Toss well until everything is evenly coated. Let this mixture sit for at least 15 minutes, or up to 4 hours in the refrigerator.
  3. Preheat your air fryer to 380°F (195°C).
  4. Place half of the chicken and potato mixture into the air fryer basket in a single layer if possible. Do not overcrowd the basket; work in batches if necessary for best crisping results.
  5. Air fry for 10 minutes.
  6. Carefully open the basket and shake well to turn the pieces.
  7. Continue to air fry for another 5 to 8 minutes, or until the potatoes are tender and the chicken reaches an internal temperature of 165°F (74°C) and the edges are slightly browned.
  8. Remove the first batch and repeat the process with the remaining chicken and potatoes.
  9. Serve immediately for a healthy air fryer recipe.

Notes

  • For extra crispy potatoes, you can soak the cut potatoes in cold water for 30 minutes before marinating, then pat them completely dry.
  • If using chicken breasts, cut them slightly smaller than the potatoes so they cook through at the same time.
  • This recipe works well as a low-calorie, low-fat meal option.
