Instructions
Wash and dry the potatoes completely. Do not peel them for maximum texture.
Slice the potatoes very thinly, aiming for 1/16-inch thickness. Use a mandoline slicer for uniform, thin slices.
Place the potato slices in a bowl of cold water for 15 minutes to remove excess starch. Drain the water.
Rinse the slices again under cold water and then dry them thoroughly using paper towels or a clean kitchen towel. This step is crucial for crispiness.
In a clean bowl, toss the dry potato slices with the olive oil until lightly coated.
Preheat your air fryer to 350°F (175°C).
Place the seasoned potato slices in a single layer in the air fryer basket. Work in batches to avoid overcrowding, which causes steaming instead of crisping.
Air fry for 10 to 15 minutes, shaking the basket every 5 minutes. Watch closely after the 10-minute mark, as cooking time varies by air fryer model and slice thickness.
