  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • 1/2 cup fresh or frozen raspberries

Instructions

  1. Prepare your air fryer by lining the basket with silicone muffin liners or paper liners secured with toothpicks if needed. Preheat the air fryer to 320°F (160°C).
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate small bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
  5. Fold in the white chocolate chips and raspberries carefully. If using frozen raspberries, do not thaw them first.
  6. Divide the batter evenly among the prepared muffin liners, filling each about two-thirds full.
  7. Place the filled liners into the air fryer basket, ensuring they do not touch the heating element.
  8. Air fry at 320°F (160°C) for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean. Check for doneness around the 12-minute mark, as air fryer models vary.
  9. Carefully remove the muffins from the air fryer and let them cool in the liners for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • If using frozen raspberries, toss them lightly in one teaspoon of flour before adding them to the batter to help prevent sinking.
  • For best results in small-batch air fryer baking, cook in batches to allow air to circulate properly around each muffin.
