You can make this hearty Bacon Cheeseburger Casserole for a comforting, family-friendly dinner. It combines the savory flavors of ground beef, crispy bacon, and melted cheese into one easy, baked dish.

  • 1.5 lbs ground beef
  • 1 cup cooked bacon, crumbled
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup beef broth
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup ketchup
  • 2 tablespoons yellow mustard
  • 1 cup dill pickle relish
  • 1 cup shredded cheddar cheese, divided
  • 0.5 cup shredded Monterey Jack cheese
  • 1 cup cooked egg noodles OR 2 cups cauliflower rice (for Low-Carb option)
  • Optional Toppings: Sliced pickles, extra bacon, chopped onion, extra cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned. Drain off any excess grease.
  3. Stir in the salt, pepper, and garlic powder into the beef mixture.
  4. Add the beef broth, cream of mushroom soup, ketchup, mustard, and pickle relish to the skillet. Mix well to combine.
  5. If using egg noodles, stir them into the beef mixture now. If using cauliflower rice for the Low-Carb option, stir it in now.
  6. Pour the entire mixture into the prepared baking dish.
  7. Sprinkle half of the cheddar cheese and all of the Monterey Jack cheese evenly over the top.
  8. Bake for 20 minutes.
  9. Remove the dish from the oven and sprinkle the remaining cheddar cheese and the crumbled bacon over the top layer.
  10. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
  11. Let the casserole rest for 5 minutes before serving. Top with your preferred toppings.

Notes

  • For a Low-Carb/Keto Bacon Cheeseburger Casserole, substitute the egg noodles with 2 cups of fresh or frozen cauliflower rice. You may need to add 5 extra minutes to the initial bake time to soften the cauliflower.
  • If you prefer a tangier flavor, substitute the ketchup with a mix of 1/2 cup ketchup and 1/2 cup of your favorite sugar-free BBQ sauce.
  • You can prepare this dish completely, cover it, and refrigerate it up to 24 hours before baking. Add 10-15 minutes to the initial covered baking time if baking from cold.
