Make these sweet and salty bacon-wrapped dates using Medjool dates stuffed with an almond, wrapped in bacon, and baked until crisp. This recipe creates a simple, flavorful appetizer.

  • 24 Medjool dates
  • 24 whole blanched almonds
  • 12 slices thin-cut bacon, halved crosswise

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Take one date and carefully slice it lengthwise, opening it up without cutting all the way through. Remove the pit if present.
  3. Place one almond inside the opened date.
  4. Take one half-slice of bacon and wrap it tightly around the date, securing the almond inside. You may need a toothpick to hold the bacon in place if it does not stay wrapped.
  5. Place the wrapped dates seam-side down on the prepared baking sheet.
  6. Bake for 15 to 20 minutes, or until the bacon is crisp and the dates are soft and caramelized.
  7. Remove toothpicks before serving.

Notes

  • For a different flavor, substitute blue cheese or goat cheese for the almond inside the date.
  • If you use thick-cut bacon, you may need to increase the cooking time slightly to achieve crispness.
