Make easy, flavorful Bang Bang Chicken Skewers featuring juicy grilled chicken coated in a homemade creamy, sweet, and spicy sauce. This recipe is perfect for a quick weeknight dinner or a crowd-pleasing appetizer.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Wooden or metal skewers (if using wooden, soak them for 30 minutes)
  • For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons Sriracha (adjust to your spice preference)
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced

Instructions

  1. Prepare the chicken: Place the cubed chicken in a bowl. Toss with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Assemble the skewers: Thread the seasoned chicken pieces onto the prepared skewers, leaving a small space between each piece.
  3. Make the sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, sesame oil, and minced garlic until smooth. This is your creamy bang bang sauce.
  4. Cook the skewers (Grilling Method): Preheat your grill to medium-high heat. Place the skewers on the oiled grates. Grill for 4-6 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. Cook the skewers (Air Fryer Method): Preheat the air fryer to 380°F (195°C). Place skewers in a single layer in the basket (work in batches if necessary). Air fry for 10-12 minutes, flipping halfway through, until cooked through.
  6. Coat the chicken: Once the chicken is cooked, immediately brush or toss the hot skewers generously with about half of the prepared bang bang sauce.
  7. Serve: Arrange the skewers on a platter. Drizzle with a little more sauce if desired, or serve the remaining sauce on the side for dipping.

Notes

  • For extra juicy chicken grilling tips, avoid overcooking. Chicken is done when the internal temperature reaches 165°F (74°C).
  • You can substitute chicken thighs for breasts for a richer flavor.
