Prepare this custardy, sweet baked French toast casserole the night before for an easy Mother’s Day brunch solution featuring seasonal strawberries and blueberries.

  • 1 loaf (13 ounces) thick-cut brioche or challah bread, cut into 1-inch cubes
  • 2 cups fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. Lightly grease a 9×13 inch baking dish. Arrange half of the bread cubes in an even layer in the bottom of the dish. Scatter the sliced strawberries and blueberries over the bread. Top with the remaining bread cubes.
  2. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  3. Slowly pour the egg mixture evenly over the bread and berries in the baking dish. Gently press down on the bread with a spatula to help it absorb the custard.
  4. Cover the baking dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  5. When ready to bake, preheat your oven to 350 degrees Fahrenheit. Remove the plastic wrap.
  6. Bake uncovered for 45 to 55 minutes, or until the top is golden brown and the center is set (a knife inserted near the center comes out mostly clean).
  7. Let the baked French toast cool for 10 minutes before serving. Dust generously with powdered sugar.

Notes

  • Using day-old bread helps the custard absorb better, resulting in a richer texture.
  • For an extra layer of flavor, you can substitute half of the milk with buttermilk.
  • This sweet brunch casserole pairs well with a side of maple syrup or whipped cream.
