1 cup finely chopped pecans
1 cup confectioners’ sugar
1/4 cup unsweetened cocoa powder
1/4 cup bourbon
2 tablespoons light corn syrup
1 teaspoon vanilla extract
Extra confectioners’ sugar or cocoa powder for rolling
Instructions
Place the crushed vanilla wafers, chopped pecans, confectioners’ sugar, and cocoa powder into a large mixing bowl. Stir the dry ingredients together until they are well combined.
In a separate small bowl, mix together the bourbon, corn syrup, and vanilla extract.
Pour the liquid mixture over the dry ingredients. Use a sturdy spoon or your hands to mix everything until a stiff dough forms.
Place the dough in the refrigerator and chill for at least 30 minutes to make rolling easier.
Place extra confectioners’ sugar or cocoa powder on a plate.
