Prepare this hearty sausage hash brown breakfast casserole the night before for a stress-free morning. It combines savory sausage, crispy potatoes, eggs, and cheese for a satisfying, crowd-pleasing dish perfect for brunch.

  • 1 (32 ounce) bag frozen shredded hash browns, thawed
  • 1 pound breakfast sausage, cooked and drained
  • 1 cup chopped onion
  • 1 cup chopped bell pepper (any color)
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Grease a 9×13 inch baking dish. Spread the thawed hash browns evenly over the bottom of the dish.
  2. Scatter the cooked sausage, chopped onion, and chopped bell pepper over the hash browns. Sprinkle with 1 cup of the shredded cheddar cheese.
  3. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
  4. Pour the egg mixture evenly over the sausage and hash brown layers. Gently press down to submerge the ingredients slightly.
  5. Cover the baking dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Remove the plastic wrap or foil.
  7. Bake covered for 30 minutes. Remove the foil and sprinkle the remaining 1 cup of cheddar cheese over the top.
  8. Continue baking uncovered for 15 to 20 minutes, or until the eggs are set and the cheese is melted and lightly golden.
  9. Let the breakfast casserole rest for 5 minutes before slicing and serving.
