Ingredients
Scale
2 cups rolled oats
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup creamy peanut butter
1/2 cup pure maple syrup
1 large egg
1 teaspoon vanilla extract
1/2 cup mix-ins (e.g., chocolate chips or raisins)
Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
In a separate medium bowl, mix the peanut butter, maple syrup, egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Fold in your chosen mix-ins.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently flatten each mound slightly with the back of a spoon to form a cookie shape.
Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a gluten free breakfast cookies option, use certified gluten free rolled oats.
Store these grab and go snack cookies in an airtight container at room temperature for up to one week, or freeze them for longer storage.
You can substitute peanut butter with almond butter for a different flavor profile.
