Make these irresistible Caramel Ritz Cracker Christmas Cookies for a perfect sweet and salty holiday treat. This simple recipe delivers a buttery, crunchy base with gooey caramel and a rich chocolate topping, ideal for cookie exchanges or festive platters.

  • 48 Ritz crackers
  • 24 soft caramel candies, unwrapped
  • 2 tablespoons heavy cream or milk
  • 1½ cups milk chocolate or semi-sweet chocolate chips
  • Holiday sprinkles, crushed candy canes, or coarse sea salt (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Arrange the Ritz crackers in a single layer on the prepared baking sheet.
  3. Place one unwrapped soft caramel candy on top of each cracker.
  4. Bake for 4 to 5 minutes, or until the caramel is soft and slightly melted. Watch carefully to prevent burning.
  5. Remove the sheet from the oven. Immediately press another Ritz cracker gently on top of the melted caramel to create a sandwich.
  6. Let the cracker sandwiches cool completely on the baking sheet until the caramel sets firm.
  7. While cooling, prepare the chocolate topping. Place the chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth.
  8. Once the caramel is set, drizzle the melted chocolate over the tops of the cracker sandwiches.
  9. If using, immediately sprinkle with holiday sprinkles, crushed candy canes, or sea salt before the chocolate hardens.
  10. Allow the chocolate to set completely before serving or storing.
