Make this comforting, low-carb chicken cauliflower rice casserole for a simple, cheesy weeknight dinner. It uses cauliflower rice as a grain substitute, making it a satisfying, healthy meal.

  • 3 cups cooked chicken breast, shredded or diced
  • 4 cups cauliflower rice (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets, small
  • 8 ounces cream cheese, softened
  • 1 cup chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until soft, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the cauliflower rice and broccoli florets. Cook for 5 to 7 minutes, stirring occasionally, until the cauliflower rice has softened slightly.
  5. Add the shredded chicken, softened cream cheese, chicken broth, Italian seasoning, salt, and pepper to the skillet. Stir until the cream cheese melts and the mixture is creamy.
  6. Remove the skillet from the heat. Stir in 3/4 cup of the shredded cheddar cheese until combined.
  7. Transfer the mixture to your prepared baking dish.
  8. Top the casserole evenly with the remaining 1/4 cup of cheddar cheese.
  9. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden brown.
  10. Let the casserole rest for 5 minutes before you serve it.

Notes

  • If you use frozen cauliflower rice, thaw it first and press out any excess moisture before adding it to the skillet.
  • For a lighter version, substitute half of the cream cheese with plain Greek yogurt.
  • You can use rotisserie chicken to save time on weeknights.
