  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can cream-style corn
  • 1 cup chopped yellow onion
  • 1 cup diced celery
  • 1 cup diced potatoes (Yukon Gold or Russet)
  • 4 slices bacon, cooked and crumbled
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1/4 cup cold water
  • Optional garnish: fresh parsley or chives

Instructions

  1. Place the raw chicken breasts or thighs into the basin of your slow cooker.
  2. Add the drained whole kernel corn, cream-style corn, onion, celery, potatoes, crumbled bacon, chicken broth, salt, pepper, thyme, and garlic powder to the slow cooker.
  3. Stir the ingredients gently to combine.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the chowder.
  6. In a small bowl, whisk together the heavy cream, flour, and cold water until smooth. This creates a slurry.
  7. Stir the slurry into the chowder in the slow cooker.
  8. Increase the slow cooker setting to HIGH (if it was on LOW) and cook uncovered for 15 to 20 minutes, stirring occasionally, until the chowder thickens to your desired consistency.
  9. Taste and adjust seasonings if needed.
  10. Ladle the creamy chicken corn chowder into bowls and garnish with fresh parsley or chives before serving.

Notes

  • For a thicker chowder, you can mash about one cup of the potatoes against the side of the slow cooker before adding the slurry.
  • Use rotisserie chicken to make this an even quicker weeknight chowder.
