1.5 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes
1 cup honey
1/2 cup low-sodium soy sauce
1/4 cup rice vinegar
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes (optional)
Wooden or metal skewers (soak wooden ones for 30 minutes)
For Spicy Yogurt Dip: 1 cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon hot sauce (adjust to your heat preference)
1/4 teaspoon salt
Optional garnish: Sesame seeds and sliced scallions
Instructions
Prepare the marinade: In a medium bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes. This is your best chicken skewer marinade.
Marinate the chicken: Place the cubed chicken into a resealable bag or shallow dish. Pour half of the honey garlic marinade over the chicken. Reserve the other half for basting later. Seal and refrigerate for at least 30 minutes, or up to 4 hours.
Prepare the dip: While the chicken marinates, combine the Greek yogurt, lemon juice, hot sauce, and salt in a small bowl. Stir well. Cover and chill until ready to serve.
Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
Grill the chicken skewers for 4 to 6 minutes per side, turning occasionally.
During the last 2 minutes of cooking, brush the skewers generously with the reserved honey garlic marinade. Continue grilling until the chicken is cooked through and the glaze is slightly caramelized.
Remove the chicken skewers from the grill. Let them rest for 2 minutes.
Serve your grilled chicken kabobs immediately, garnished with sesame seeds and scallions, alongside the spicy yogurt dip.
Notes
For chicken and vegetable skewers, alternate chicken pieces with chunks of bell pepper, onion, and zucchini.
You can bake these chicken skewers at 400°F for 15-20 minutes if you do not want to grill.
This recipe works well for make ahead chicken skewers; marinate them the day before for deeper flavor.
