Ingredients
Scale
1 cup fresh cilantro, packed
1/2 cup Greek yogurt (or sour cream/mayonnaise for variation)
2 tablespoons fresh lime juice (about 1 large lime)
1 clove garlic
1/2 teaspoon salt
2 tablespoons water (or more, for desired consistency)
Instructions
Gather all your ingredients. You will need a blender or food processor for the smoothest texture.
Place the fresh cilantro, Greek yogurt, lime juice, garlic clove, and salt into the blender or food processor.
Add 2 tablespoons of water to help the mixture blend.
Process the ingredients until the sauce is completely smooth and creamy. Stop and scrape down the sides of the container as needed to incorporate all the cilantro.
Check the consistency. If you prefer a thinner sauce, add more water, one teaspoon at a time, until you reach your desired drizzle or dipping consistency.
Taste the sauce and adjust salt or lime juice if necessary.
Transfer the homemade taco sauce to a serving bowl or airtight container. You can serve it immediately or chill it for 15 minutes to let the flavors combine further.
Notes
For a richer sauce, substitute the Greek yogurt with mayonnaise or a combination of both.
To make a vegan cilantro lime dressing, use a dairy-free yogurt or vegan mayonnaise as the creamy base.
For a spicy kick, add half a seeded jalapeño to the blender with the other ingredients.
This sauce is excellent as a marinade for shrimp or chicken before grilling.
