Make this decadent cinnamon roll French toast casserole ahead of time for a simple, indulgent brunch. It combines the gooey flavor of cinnamon rolls with classic baked French toast.

  • 1 (12.5 ounce) package refrigerated cinnamon rolls (with icing)
  • 6 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 2 tablespoons butter, melted

Instructions

  1. Grease a 9×13 inch baking dish with butter or cooking spray.
  2. Cut each cinnamon roll into quarters. Arrange the pieces evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  4. Pour the egg mixture evenly over the cinnamon roll pieces in the baking dish. Gently press down on the rolls to help them soak up the custard.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 350 degrees Fahrenheit. Remove the plastic wrap.
  7. Bake for 30 to 35 minutes, or until the casserole is puffed, golden brown, and cooked through.
  8. While the casserole bakes, prepare the icing packets that came with the cinnamon rolls according to package directions, or use a simple glaze made from powdered sugar and a splash of milk.
  9. Remove the casserole from the oven. Drizzle the icing evenly over the warm French toast bake.
  10. Slice and serve immediately for a brunch crowd pleaser.

Notes

  • For extra flavor, use brioche bread cubes instead of store-bought rolls for a more traditional French toast base.
  • If you prefer a richer custard, substitute half and half for the milk.
