  • 2 oz fresh peach puree (from ripe peaches)
  • 1 small slice of fresh peach for garnish (optional)

Instructions

  1. Chill your champagne flutes thoroughly before starting.
  2. Prepare the peach puree by blending ripe peaches until smooth. Strain the puree if you prefer a thinner consistency.
  3. Spoon 2 ounces of the peach puree into the bottom of each chilled flute.
  4. Slowly top with 4 ounces of chilled Prosecco. Pour gently to maintain the bubbles.
  5. Garnish each glass with a thin slice of fresh peach placed on the rim or dropped into the drink.
  6. Serve immediately.

  • For an authentic Italian Bellini, use high-quality, ripe white peaches.
