Make this easy, high-protein cottage cheese Alfredo sauce. It delivers the rich, creamy texture of classic Alfredo without heavy cream, perfect for a quick, healthy weeknight pasta meal.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup milk (any kind)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Place the cottage cheese, Parmesan cheese, milk, minced garlic, lemon juice, salt, pepper, and nutmeg (if using) into a high-speed blender.
  2. Blend on high speed until the sauce is completely smooth and silky. Stop and scrape down the sides as needed to ensure no lumps remain. This step is key for a creamy texture.
  3. Pour the sauce into a small saucepan and heat over medium-low heat, stirring constantly, until warmed through. Do not boil.
  4. Taste the sauce and adjust salt or pepper if necessary.
  5. Toss immediately with your favorite cooked pasta, such as fettuccine or spaghetti, or serve over steamed vegetables or grilled chicken.
  6. Serve hot, topped with extra grated Parmesan cheese.

Notes

  • For a lower-carb option, serve this sauce over zucchini noodles or spaghetti squash instead of traditional pasta.
  • If the sauce seems too thick after blending, add milk one tablespoon at a time until you reach your desired consistency.
  • This sauce reheats well; add a splash of milk when reheating to restore creaminess.
