Instructions

  1. Place the cottage cheese, sweetener, and vanilla extract into a high-speed blender or food processor.
  2. Blend the mixture until it becomes completely smooth and creamy. Stop and scrape down the sides as needed. This step is crucial for removing curds.
  3. If using, add the xanthan gum and blend for 10 more seconds until fully incorporated.
  4. Pour the smooth mixture into a freezer-safe container, such as a loaf pan or an airtight container.
  5. Cover the container tightly with a lid or plastic wrap pressed directly onto the surface of the mixture.
  6. Freeze for at least 6 hours, or until firm.
