Ingredients
Scale
1/4 cup cottage cheese (blended smooth)
1 tablespoon cocoa powder
1 tablespoon sweetener (like erythritol or sugar)
1 tablespoon almond flour
1/4 teaspoon vanilla extract
1 small square dark chocolate (optional, for topping)
Instructions
Place the cottage cheese into a microwave-safe mug. Blend it briefly with a fork or small whisk until it is mostly smooth.
Add the cocoa powder, sweetener, and almond flour to the mug. Mix until just combined. Do not overmix.
Place the optional square of dark chocolate on top, if using.
Microwave on high for 60 to 90 seconds. Cooking time varies by microwave power; start checking at 60 seconds.
The brownie is done when the edges are set but the center is still slightly soft and gooey.
Let it cool for one minute before eating directly from the mug.
Notes
For the smoothest texture, blend the cottage cheese separately in a small food processor or blender until completely creamy before adding dry ingredients.
If you prefer a cake-like texture, cook for the full 90 seconds. For a fudgier texture, stop cooking closer to 60 seconds.
This recipe is naturally gluten free and low carb depending on the sweetener you select.
