1 cup dry pasta (any shape)
1 cup cottage cheese (full fat recommended)
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup reserved pasta water
Instructions
Cook pasta according to package directions. Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the pasta.
While the pasta cooks, combine the cottage cheese, Parmesan cheese, minced garlic, olive oil, salt, and pepper in a blender or food processor.
Blend the mixture until it becomes completely smooth and creamy. This removes any graininess.
Return the drained pasta to the pot over low heat.
Add the blended cottage cheese sauce to the pasta. Stir to coat everything evenly.
Add the reserved pasta water, one tablespoon at a time, stirring constantly until the sauce reaches your desired consistency. It should coat the pasta well.
Serve immediately.
Notes
For a richer flavor, use roasted garlic instead of raw minced garlic.
If you prefer a baked cottage cheese pasta dish, mix the sauce with the pasta and transfer to a small baking dish. Top with extra Parmesan and bake at 375°F (190°C) for 10 minutes until bubbly.
This sauce works as a great ricotta substitute in many pasta recipes.
