This simple one-dish meal combines seasoned ground beef, corn, black beans, and a cheesy cornbread topping made from a box mix. It is a comforting, budget-friendly dinner perfect for busy weeknights.

  • 1 tablespoon oil
  • 1 pound ground beef
  • 1 small onion, diced (optional)
  • 1 can (10.5 ounces) cream of mushroom soup or cream of chicken soup
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) cornbread mix (Jiffy-style recommended)
  • Ingredients required by cornbread mix (usually milk and egg)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat the oil in a large skillet over medium heat. Add the ground beef and diced onion. Cook the beef until it is fully browned. Drain off any excess fat.
  3. Stir the cream soup and the drained corn into the beef mixture. Season the mixture with salt and pepper.
  4. Spread the beef and vegetable mixture evenly across the bottom of your prepared baking dish.
  5. Sprinkle the shredded cheddar cheese evenly over the beef layer.
  6. In a separate bowl, prepare the cornbread batter following the directions on the box, using the required milk and egg.
  7. Pour the cornbread batter evenly over the cheese layer in the baking dish.
  8. Bake uncovered for 30 to 35 minutes, or until the cornbread topping is golden brown and set when lightly touched.
  9. Let the casserole rest for 5 to 10 minutes before you cut and serve it.

Notes

  • For a spicy kick, add one can of diced green chiles or a few chopped jalapeños to the beef mixture before spreading it in the dish.
  • This is a great budget-friendly beef dinner that you can prepare ahead of time; cover and refrigerate before baking.
