  • 4 ounces sharp cheddar cheese, shredded
  • 1/2 cup dried cranberries, finely chopped
  • 1/4 cup finely chopped pecans, plus 1 cup for coating

  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons finely chopped green onion (optional)

Instructions

  1. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, chopped dried cranberries, 1/4 cup chopped pecans, cinnamon, salt, and pepper. Mix until all ingredients are fully incorporated and the mixture is uniform.
  2. If using, mix in the chopped green onion.
  3. Place the remaining 1 cup of pecans on a shallow plate or baking sheet.
  4. Scoop the cheese mixture onto a piece of plastic wrap. Shape the mixture into a ball.
  5. Roll the cheese ball in the chopped pecans until it is completely coated. Press gently so the pecans adhere.
