1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining. Set the pasta aside.
Season the chicken pieces with salt, pepper, and the Cajun seasoning.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
