One-Pot Creamy Ranch Chicken and Gnocchi with Bacon

Make this rich and comforting one-pot meal featuring tender chicken, pillowy gnocchi, and crispy bacon in a creamy sauce. This easy recipe is perfect for quick weeknight dinners.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 1 (16 ounce) package potato gnocchi
  • 1 cup low-sodium chicken broth
  • 1 (10.5 ounce) can cream of chicken soup (low sodium preferred)
  • 8 ounces cream cheese, cut into cubes
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup frozen peas (optional)
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chopped bacon and cook until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pan.
  3. Add the seasoned chicken to the skillet and cook until browned on all sides and nearly cooked through, about 5 to 7 minutes.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Add the gnocchi, cream of chicken soup, and dry ranch seasoning mix. Stir well to combine.
  5. Bring the mixture to a simmer. Reduce the heat to medium-low, cover the skillet, and cook for 5 to 7 minutes, stirring occasionally, until the gnocchi is tender.
  6. Stir in the cream cheese cubes until they melt and the sauce becomes smooth and creamy.
  7. If using, stir in the frozen peas until they are heated through.
  8. Remove the skillet from the heat. Stir in half of the shredded cheese until melted.
  9. Serve immediately, topped with the reserved crispy bacon and the remaining shredded cheese.

Notes

  • For an extra layer of flavor, use a full-fat cream cheese.
  • You can substitute pre-cooked rotisserie chicken for the raw chicken breasts to save cooking time.
  • If the sauce seems too thick, add a splash more chicken broth until you reach your desired consistency.
