1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 large egg, lightly beaten
1/2 cup all-purpose flour
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons unsalted butter, melted
2 cloves garlic, minced
1/4 cup grated Parmesan cheese, for topping
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, whisk the egg. In the third dish, combine the panko breadcrumbs, 1/4 cup Parmesan cheese, garlic powder, onion powder, salt, and pepper.
Dredge each chicken piece first in the flour, shaking off any excess. Dip the floured chicken into the egg mixture, allowing excess to drip off. Finally, press the chicken firmly into the breadcrumb mixture to coat completely.
Place the coated chicken bites on the prepared baking sheet in a single layer. Drizzle the tops lightly with olive oil.
Bake for 15 to 18 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature reaches 165°F).
While the chicken bakes, prepare the garlic butter sauce. In a small saucepan over low heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
Remove the chicken from the oven. Immediately transfer the hot chicken bites to a large bowl. Pour the melted garlic butter mixture over the chicken and toss gently to coat.
Sprinkle the remaining 1/4 cup of Parmesan cheese over the buttered chicken bites and toss once more.
Garnish with fresh parsley before serving hot. Serve with your favorite dipping sauce.
Notes
For extra crispy chicken bites, spray the coated pieces lightly with cooking spray before baking.
You can substitute chicken thighs for breasts if you prefer a richer flavor.
