Make gourmet french toast using sourdough bread for a custardy interior and a crisp exterior. This easy brunch idea feels like a luxury breakfast.

Ingredients

Scale
  • 6 slices thick-cut sourdough bread
  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter, for cooking

Instructions

  1. In a shallow dish, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until fully combined to create the custard.
  2. Place one slice of sourdough bread into the custard mixture. Let it soak for 30 seconds on each side. Do not over-soak; sourdough is dense.
  3. Remove the soaked bread and place it on a plate. Repeat with the remaining slices.
  4. Heat a large skillet or griddle over medium heat. Add half of the butter and let it melt until foamy.
  5. Place the soaked bread slices onto the hot skillet, ensuring they do not touch. Cook for 3 to 4 minutes per side until deeply golden brown and crisp on the outside.
  6. Add the remaining butter to the skillet and cook the second batch.
  7. Serve immediately with your preferred toppings.

Notes

  • For extra crispness, you can finish the cooked toast in a 300°F oven for 5 minutes after pan-frying.
  • Use day-old sourdough for the best texture absorption.
  • This recipe works well with artisan bread varieties.
