  • 2 lbs ground beef (80/20 recommended)
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 packet dry onion soup mix (e.g., Lipton)
  • 1/2 cup finely chopped caramelized onions
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (10.5 ounce) can condensed French onion soup, undiluted
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, gently combine the ground beef, egg, breadcrumbs, milk, dry onion soup mix, caramelized onions, Worcestershire sauce, pepper, and salt. Do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of a 5 or 6-quart slow cooker.
  3. Pour the undiluted French onion soup evenly over the top of the meatloaf.
  4. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours.
  5. During the last 15 minutes of cooking, place the slices of Swiss cheese on top of the meatloaf. Cover and allow the cheese to melt completely.
  6. Carefully remove the meatloaf from the slow cooker. Let it rest for 10 minutes before slicing. Spoon some of the pan juices over the slices when serving.

Notes

  • For the best flavor, prepare the caramelized onions ahead of time.
  • Serve this hearty meatloaf with mashed potatoes or roasted green beans for a complete comfort food meal.
  • If you prefer a thicker sauce, remove the meatloaf after cooking, then mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the remaining liquid in the slow cooker. Cook on HIGH for 10 minutes until thickened.
