Make restaurant-quality chicken parmesan at home with this simple baked recipe. You get crispy, cheesy cutlets without deep frying.

  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 cups marinara sauce
  • 8 ounces fresh mozzarella cheese, sliced

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
  2. Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, garlic powder, salt, and pepper.
  3. Take one pounded chicken cutlet and dredge it thoroughly in the flour, shaking off any excess.
  4. Dip the floured cutlet into the beaten egg mixture, letting excess drip off.
  5. Press the cutlet firmly into the breadcrumb mixture until it is completely coated on both sides. Place the coated cutlet on the prepared baking sheet. Repeat with the remaining chicken.
  6. Drizzle the tops of the breaded chicken lightly with olive oil.
  7. Bake for 15 minutes.
  8. Remove the chicken from the oven. Spoon about 1/4 cup of marinara sauce over each cutlet. Top each with slices of mozzarella cheese and a sprinkle of extra Parmesan cheese.
  9. Return the chicken to the oven and bake for another 5 to 10 minutes, or until the cheese is melted, bubbly, and lightly browned, and the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
  10. Serve immediately over your favorite pasta.
