  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup chopped fresh tomato
  • 1 cup chopped red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Tortilla chips, for serving

Instructions

  1. Combine the rinsed black beans, black-eyed peas, drained corn, chopped tomato, red onion, green bell pepper, and red bell pepper in a large mixing bowl.
  2. In a separate small bowl, whisk together the olive oil, lime juice, red wine vinegar, cumin, salt, black pepper, and garlic powder to create the zesty lime dressing.
  3. Pour the dressing over the bean and vegetable mixture. Add the chopped cilantro.
  4. Gently fold all ingredients together until everything is evenly coated with the dressing.
  5. Cover the bowl and chill the Cowboy Caviar in the refrigerator for at least 30 minutes to allow the flavors to meld.
  6. Serve your Texas Caviar cold or at room temperature with tortilla chips for dipping.
