Make these easy Cranberry Brie Bites for an elegant, crowd-pleasing appetizer. Flaky puff pastry cups hold creamy brie and tart cranberry sauce, perfect for holiday gatherings or parties.

  • 1 package (14.1 ounces) frozen puff pastry, thawed
  • 8 ounces brie cheese, rind removed and cut into small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 egg, beaten (for egg wash)
  • Optional: Toasted pecans or fresh rosemary for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a standard 12-cup muffin tin.
  2. Unfold the thawed puff pastry sheets on a lightly floured surface. Use a 3-inch round cookie cutter to cut out circles from the pastry. You should get about 12 to 15 circles per sheet.
  3. Gently press each pastry circle into the cups of the prepared muffin tin, forming a small cup shape.
  4. Place one cube of brie cheese into the bottom of each pastry cup.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce. Do not overfill.
  6. Brush the edges of the exposed puff pastry lightly with the beaten egg wash.
  7. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed, and the cheese is melted and bubbly.
  8. Remove the bites from the oven. Let them cool in the tin for 5 minutes before carefully transferring them to a wire rack to cool slightly.
  9. If using, garnish immediately with toasted pecans or a small sprig of fresh rosemary.
  10. Serve the brie bites warm.

Notes

  • You can use crescent roll dough instead of puff pastry for a slightly different texture. Cut the dough into squares and press into the muffin tin.
  • For make ahead party food, assemble the bites completely (without baking) and store them covered in the refrigerator for up to 4 hours. Add a few extra minutes to the baking time if baking directly from the fridge.
  • If you prefer a savory appetizer, substitute the cranberry sauce with fig jam or caramelized onions.
