1 pound fettuccine pasta
1 tablespoon olive oil
4 cloves garlic, minced
10 ounces fresh spinach
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese, plus more for serving
1/4 teaspoon ground black pepper
1/4 teaspoon salt
Pinch of nutmeg
Instructions
Cook the fettuccine according to package directions until al dente. Reserve about 1 cup of the pasta water before draining. Set the drained pasta aside.
In a large skillet or pot, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
Add the fresh spinach to the skillet in batches. Cook, stirring often, until the spinach wilts down completely. This takes about 3 to 5 minutes.
Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer. Reduce the heat to low.
Stir in the grated Parmesan cheese, black pepper, salt, and nutmeg. Continue stirring until the cheese melts and the sauce thickens slightly.
Add the cooked pasta to the skillet with the sauce. Toss everything together until the pasta is evenly coated.
If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
Serve immediately with extra Parmesan cheese on top.
Notes
For a heartier meal, add cooked, shredded chicken or shrimp to the sauce when you add the pasta.
If you prefer a brighter flavor, add 1 tablespoon of fresh lemon juice to the sauce at the end.
You can substitute half-and-half for heavy cream, but the sauce will be thinner.
