Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 (13.5 oz) can full-fat coconut milk
  • 4 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 inch fresh ginger, sliced
  • 2 stalks lemongrass, bruised and cut into 2-inch pieces
  • 4 kaffir lime leaves (optional)
  • 1 cup sliced mushrooms
  • 1 cup sliced carrots
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Cooked rice or noodles for serving (optional)

Instructions

  1. Place the chicken, coconut milk, chicken broth, red curry paste, fish sauce, brown sugar, ginger, lemongrass, and kaffir lime leaves into your slow cooker.
  2. Stir all ingredients together until the curry paste is dissolved.
  3. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the chicken is cooked through and tender.
  4. Remove the chicken from the slow cooker and shred it using two forks. Discard the ginger, lemongrass, and kaffir lime leaves.
  5. Return the shredded chicken to the slow cooker. Add the sliced mushrooms and carrots.
  6. Stir well and cook on high for another 30 minutes, or until the vegetables are tender-crisp.
  7. Stir in the fresh lime juice just before serving.
  8. Ladle the warm coconut soup into bowls. Garnish with fresh cilantro. Serve over rice or noodles if desired.

Notes

  • For a richer flavor, use only the thick cream from the top of the coconut milk can for the first stir, then add the rest of the liquid.
  • If you prefer a thicker broth, remove about 1 cup of the liquid near the end, mix it with 1 teaspoon of cornstarch, and stir it back into the soup.
  • This recipe makes a great healthy coconut soup alternative to takeout.
