Easy One-Pot Smoked Sausage and Rice Skillet

Make this hearty, flavorful sausage and rice skillet in one pot for quick weeknight dinners and minimal cleanup. This recipe uses smoked sausage for a comforting, satisfying meal ready fast.

  • 1 tablespoon olive oil
  • 1 pound smoked sausage (kielbasa), sliced into rounds
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 cup long-grain white rice, uncooked
  • 1 teaspoon Cajun seasoning (or to taste)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas (optional)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Add the sliced smoked sausage to the skillet and cook until lightly browned on both sides, about 4 to 5 minutes. Remove the sausage and set it aside, leaving any rendered fat in the skillet.
  3. Add the chopped onion and bell pepper to the skillet. Sauté until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the chicken broth and add the diced tomatoes (with their juice), uncooked rice, Cajun seasoning, oregano, and black pepper. Stir everything together well.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the skillet tightly, and simmer for 15 to 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during this time.
  7. Remove the skillet from the heat. Stir in the cooked sausage and frozen peas, if using. Cover and let stand for 5 minutes to allow the peas to heat through.
  8. If using cheese, sprinkle the shredded cheddar cheese over the top, cover briefly until melted, then fluff the rice mixture gently with a fork before serving.

Notes

  • For a spicier kick, use Andouille sausage instead of standard smoked sausage, or increase the amount of Cajun seasoning.
  • This recipe works well with brown rice, but you must increase the cooking time by about 15 to 20 minutes and add extra broth as needed.
  • If you prefer a cheesier sausage and rice skillet, increase the cheddar cheese to 1 cup.
