Make bite-size pizza muffins packed with cheese and pepperoni, perfect for snacks, parties, or packed lunches.

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup finely chopped pepperoni
  • 1/2 cup pizza sauce

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in 3/4 cup of the mozzarella cheese and the chopped pepperoni.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with about 1 teaspoon of pizza sauce.
  8. Sprinkle the remaining 1/4 cup of mozzarella cheese over the sauce.
  9. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These freeze well. Cool completely, then place in a freezer-safe bag for up to three months. Thaw overnight or reheat from frozen at 350 degrees Fahrenheit for 15 minutes.
  • You can substitute other pizza toppings like cooked sausage or diced bell peppers for the pepperoni.
  • For a richer flavor, use buttermilk instead of regular milk.
