1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1 cup milk
1/4 cup vegetable oil
1 large egg
1 cup shredded mozzarella cheese, divided
1/2 cup finely chopped pepperoni
1/2 cup pizza sauce
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
Gently fold in 3/4 cup of the mozzarella cheese and the chopped pepperoni.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Top each muffin with about 1 teaspoon of pizza sauce.
Sprinkle the remaining 1/4 cup of mozzarella cheese over the sauce.
Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
These freeze well. Cool completely, then place in a freezer-safe bag for up to three months. Thaw overnight or reheat from frozen at 350 degrees Fahrenheit for 15 minutes.
You can substitute other pizza toppings like cooked sausage or diced bell peppers for the pepperoni.
For a richer flavor, use buttermilk instead of regular milk.
