  • 1 pound smoked sausage or andouille sausage, sliced
  • 1 pound penne or bowtie pasta
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Cajun seasoning (adjust to your spice preference)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place the sliced sausage into a large, deep skillet or Dutch oven over medium-high heat. Cook until the sausage is lightly browned, about 4 to 6 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the skillet.
  2. Add the diced onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and Cajun seasoning, cooking for 1 minute until fragrant.
  3. Add the dry pasta, diced tomatoes (with their juice), and chicken broth to the skillet. Stir everything together.
  4. Bring the mixture to a boil, then reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent sticking.
  5. Once the pasta is tender and most of the liquid is absorbed, remove the skillet from the heat. Stir in the heavy cream, shredded cheddar cheese, Parmesan cheese, Italian seasoning, salt, and pepper until the sauce is smooth and creamy.
  6. Return the cooked sausage to the skillet and stir to combine and heat through.
  7. Serve immediately. Garnish your creamy sausage pasta with fresh chopped parsley.

Notes

  • If you prefer Italian sausage over Cajun sausage, substitute mild or hot Italian sausage and use 1 teaspoon of Italian seasoning instead of Cajun seasoning.
  • For a richer sauce, use half-and-half instead of heavy cream.
  • You can add a handful of fresh spinach during the last 2 minutes of cooking for added vegetables.
