Ingredients
Scale
1 cup cottage cheese (full fat or low fat)
4 large eggs
1 teaspoon baking powder
1/4 teaspoon salt
Instructions
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
Place the cottage cheese, eggs, baking powder, and salt into a food processor or high-speed blender.
Blend the mixture until it is completely smooth and creamy, scraping down the sides as needed. This step is key for a fluffy texture.
Spoon the batter onto the prepared baking sheet, forming 6 to 8 equal mounds, similar to large biscuits. Do not spread them out too much; they will spread slightly while baking.
Bake for 25 to 30 minutes, or until the edges are lightly golden brown and the tops are set and firm to the touch.
Remove from the oven and let the cloud bread cool completely on the baking sheet before handling. They firm up as they cool.
Use this low-carb bread alternative for sandwiches, toast, or as a side dish.
Notes
For best results, use a fine-curd cottage cheese or blend it very well to avoid lumps.
If you want a slightly crispier exterior, you can bake them for the last 5 minutes at 325°F (160°C).
This bread is best eaten the day it is made for the lightest texture.
