  • 4 ounces high-quality dark chocolate (70% cacao recommended), finely chopped
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Place the finely chopped dark chocolate into a medium saucepan.
  2. Pour the whole milk and heavy cream over the chocolate.
  3. Heat the mixture over medium-low heat, stirring constantly with a whisk until the chocolate is completely melted and the mixture is smooth. Do not let it boil.
  4. Once the chocolate is fully incorporated, add the sugar, vanilla extract, and salt. Continue to whisk gently until the sugar dissolves and the mixture is hot throughout, about 3 to 5 minutes.
  5. For a thicker, more decadent sipping chocolate, reduce the heat to low and let it simmer very gently for an additional 5 minutes, whisking often. This reduces the liquid slightly and deepens the texture.
  6. Remove the saucepan from the heat. Taste and add more sugar if you prefer it sweeter.
  7. Pour the French hot chocolate into mugs. Serve immediately, perhaps topped with fresh whipped cream or a dusting of cocoa powder.
