Make a rich, comforting sausage gravy from scratch using simple pantry staples for a traditional Southern breakfast.

  • 1/2 cup pork sausage (bulk or casings removed)
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the sausage in a medium skillet over medium heat. Cook the sausage, breaking it up with a spoon, until it is fully browned.
  2. Remove the skillet from the heat. Scoop out most of the rendered sausage fat, leaving about 1/4 cup of fat in the skillet.
  3. Return the skillet to medium-low heat. Sprinkle the flour over the sausage and fat. Stir constantly for 1 to 2 minutes to cook out the raw flour taste, creating a roux.
  4. Slowly pour in the milk while whisking continuously to prevent lumps.
  5. Increase the heat to medium. Continue to cook, stirring often, until the gravy thickens enough to coat the back of a spoon, about 5 to 8 minutes. Do not let it boil rapidly.
  6. Remove the gravy from the heat. Stir in the salt and pepper.
  7. Serve immediately over warm buttermilk biscuits for a comfort food breakfast.

Notes

  • If the gravy becomes too thick upon standing, stir in a splash of extra milk until you reach your desired consistency.
  • For a spicier flavor, add a pinch of cayenne pepper with the salt and pepper.
