  • 2 cups cooked, shredded chicken breast
  • 4 slices bacon, cooked and crumbled
  • 1 ripe avocado, mashed
  • 1/4 cup Dijon mustard
  • 3 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped celery
  • 2 tablespoons chopped fresh chives

Instructions

  1. Cook the chicken breasts until done. Shred or dice the chicken and place it in a medium mixing bowl.
  2. Cook the bacon until crisp. Crumble the bacon and add it to the bowl with the chicken.
  3. In a separate small bowl, whisk together the mashed avocado, Dijon mustard, honey, apple cider vinegar, onion powder, garlic powder, salt, and pepper until the dressing is smooth and creamy.
  4. Pour the honey mustard dressing over the chicken and bacon mixture.
  5. Add the chopped celery and fresh chives to the bowl.
  6. Gently fold all ingredients together until the chicken is evenly coated. Do not overmix.
