Easy Instant Pot Lazy Lasagna

Make a comforting, cheesy lasagna without the oven or boiling noodles. This one-pot Instant Pot recipe delivers classic Italian flavor quickly for a family weeknight dinner.

  • 1 pound ground beef or Italian sausage
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) can tomato sauce
  • 1 cup water
  • 12 lasagna noodles, broken into 2-inch pieces
  • 1 cup water
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese

Instructions

  1. Brown the ground meat in the Instant Pot on the Sauté setting. Drain any excess fat.
  2. Stir in the oregano, basil, and garlic powder with the meat. Cook for 1 minute until fragrant.
  3. Pour in the marinara sauce, tomato sauce, and 1 cup of water. Stir to combine everything on the bottom of the pot to prevent a burn notice.
  4. Add the broken lasagna noodles on top of the sauce mixture. Do not stir them in.
  5. In a separate bowl, mix the ricotta cheese, egg, Parmesan cheese, salt, and pepper until combined. Drop spoonfuls of the ricotta mixture evenly over the noodles.
  6. Pour the remaining 1 cup of water over the top of the ingredients. Do not stir.
  7. Secure the lid and set the valve to Sealing. Cook on High Pressure for 8 minutes.
  8. When the cooking time finishes, perform a Quick Release of the pressure.
  9. Carefully open the lid. Gently stir the lasagna mixture until the noodles are coated and the sauce is creamy.
  10. Stir in 1 cup of the mozzarella cheese until melted and incorporated.
  11. Top the lasagna with the remaining 1 cup of mozzarella cheese. Cover the pot with the lid (do not seal) or place the trivet over the pot and let it sit for 5 minutes to melt the cheese.
  12. Serve your cheesy Instant Pot pasta warm.

Notes

  • For a richer flavor, substitute Italian sausage for ground beef.
  • If you prefer a thicker sauce, reduce the total amount of water by 1/2 cup.
  • This recipe works well for make ahead Instant Pot lasagna; cool completely before refrigerating.
