Make a comforting, cheesy lasagna without the oven or boiling noodles. This one-pot Instant Pot recipe delivers classic Italian flavor quickly for a family weeknight dinner.
Stir in the oregano, basil, and garlic powder with the meat. Cook for 1 minute until fragrant.
Pour in the marinara sauce, tomato sauce, and 1 cup of water. Stir to combine everything on the bottom of the pot to prevent a burn notice.
Add the broken lasagna noodles on top of the sauce mixture. Do not stir them in.
In a separate bowl, mix the ricotta cheese, egg, Parmesan cheese, salt, and pepper until combined. Drop spoonfuls of the ricotta mixture evenly over the noodles.
Pour the remaining 1 cup of water over the top of the ingredients. Do not stir.
Secure the lid and set the valve to Sealing. Cook on High Pressure for 8 minutes.
When the cooking time finishes, perform a Quick Release of the pressure.
Carefully open the lid. Gently stir the lasagna mixture until the noodles are coated and the sauce is creamy.
Stir in 1 cup of the mozzarella cheese until melted and incorporated.
Top the lasagna with the remaining 1 cup of mozzarella cheese. Cover the pot with the lid (do not seal) or place the trivet over the pot and let it sit for 5 minutes to melt the cheese.
Serve your cheesy Instant Pot pasta warm.
Notes
For a richer flavor, substitute Italian sausage for ground beef.
If you prefer a thicker sauce, reduce the total amount of water by 1/2 cup.
This recipe works well for make ahead Instant Pot lasagna; cool completely before refrigerating.
