Transform your leftover meatloaf into satisfying, textural mini sandwiches for a comforting lunch or snack.

  • 1 lb leftover meatloaf, crumbled or thinly sliced
  • 8 small slider buns or dinner rolls
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup finely chopped onion
  • 1/4 cup ketchup or barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 cup shredded cheddar cheese (optional)
  • Butter, for toasting

Instructions

  1. In a medium bowl, combine the crumbled or sliced leftover meatloaf with mayonnaise, Dijon mustard, chopped onion, ketchup or barbecue sauce, Worcestershire sauce, and garlic powder. Mix until just combined.
  2. If the mixture seems too dry, add a small splash of water or beef broth.
  3. Split the slider buns. Lightly butter the cut sides of the buns.
  4. Heat a skillet over medium heat. Place the bottom halves of the buns cut-side down and toast until lightly golden, about 1 minute. Remove from skillet.
  5. Return the meatloaf mixture to the skillet. Cook over medium-low heat, stirring occasionally, until heated through, about 5 to 7 minutes. If using cheese, sprinkle it over the mixture during the last minute of cooking and cover briefly until melted.
  6. Spoon the warm meatloaf mixture evenly onto the toasted bottom buns.
  7. Place the top buns on the sliders. If desired, you can briefly place the assembled sliders back in the warm skillet, covered, for 1 minute to warm the tops.
  8. Serve immediately as a savory lunch idea or quick snack.

  • For extra flavor, mix a dash of smoked paprika into the meatloaf mixture.
  • Use high-quality, soft slider buns for the best texture.
  • These sliders reheat well in a toaster oven for a quick meal later.
