Instructions
In a large pot or Dutch oven, brown the sliced smoked sausage over medium heat until lightly crisped. Remove the sausage with a slotted spoon and set aside, leaving about 1 tablespoon of drippings in the pot.
Add the chopped onion, bell pepper, and celery to the pot. Cook, stirring occasionally, until the vegetables soften, about 5 to 7 minutes.
Add the minced garlic, thyme, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant.
Return the sausage to the pot. Add the chicken broth and bay leaf. Bring the mixture to a simmer.
