Make quick, savory, and sweet mini grilled cheese appetizers using soft Hawaiian sweet rolls. This recipe is perfect for game days or easy party sliders.

  • 1 package (12 count) Hawaiian sweet rolls
  • 4 tablespoons unsalted butter, softened, or mayonnaise
  • 8 ounces sharp cheddar cheese, thinly sliced or shredded
  • 4 ounces Monterey Jack cheese, thinly sliced or shredded
  • Optional: 4 slices deli ham or cooked bacon

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Slice the entire package of Hawaiian rolls horizontally, keeping the rolls connected in one piece.
  3. Place the bottom half of the rolls cut-side up on a baking sheet.
  4. Layer the cheddar and Monterey Jack cheese evenly over the bottom half of the rolls. If using ham or bacon, place a slice over the cheese layer now.
  5. Place the top half of the rolls over the cheese and meat layer.
  6. In a small bowl, mix the softened butter with a pinch of salt, or use mayonnaise. Spread this mixture evenly over the top surface of the top half of the rolls.
  7. Bake for 10 to 12 minutes, or until the cheese is melted and the tops are lightly golden.
  8. Remove the sheet from the oven. Carefully spread the remaining butter mixture over the exposed sides of the rolls.
  9. Place the baking sheet under the broiler for 1 to 3 minutes, watching closely, until the tops are deeply golden brown and crispy.
  10. Remove from the oven and let cool for 2 minutes before slicing the entire sheet into individual mini grilled cheese bites.

  • For the best melt and flavor contrast with the sweet bread, use a mix of sharp cheddar and a good melting cheese like Monterey Jack or Gruyere.
  • Using mayonnaise instead of butter on the exterior gives a more consistent, deep golden-brown crust when baking.
  • Serve these sweet and savory grilled cheese melts immediately with a side of warm tomato soup for dipping.
