Make this creamy, comforting copycat Olive Garden Chicken Gnocchi Soup at home. This one-pot recipe features tender chicken, soft gnocchi, spinach, and carrots in a rich, herb-infused broth.

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 (16 ounce) package potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese
  • Salt to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
  4. Gradually whisk in the chicken broth until smooth. Stir in the Italian seasoning, thyme, and pepper. Bring the mixture to a simmer.
  5. Add the shredded cooked chicken and the uncooked gnocchi to the pot. Cook according to the gnocchi package directions, usually until the gnocchi float to the surface, about 3 to 5 minutes.
  6. Reduce the heat to low. Stir in the heavy cream and fresh spinach. Cook until the spinach wilts, about 2 minutes. Do not allow the soup to boil after adding the cream.
  7. Stir in the Parmesan cheese until melted and the soup is creamy. Taste and add salt as needed.
  8. Serve hot with crusty bread.

Notes

  • You can cook the chicken breasts directly in the broth until done, then shred them, or use pre-cooked rotisserie chicken for faster preparation.
  • For a thicker soup, simmer uncovered for a few extra minutes before adding the cream.
