Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup chopped pecans, toasted, divided
  • 1/2 cup light corn syrup
  • 1/4 cup packed light brown sugar
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, beat the softened cream cheese, powdered sugar, 1/2 cup brown sugar, 1/2 cup softened butter, 1 teaspoon vanilla extract, and salt until the mixture is smooth and creamy.
  2. Stir in 1/2 cup of the toasted chopped pecans into the cream cheese mixture.
  3. Press the dip mixture evenly into the bottom of a shallow serving dish or pie plate. Chill in the refrigerator for at least 30 minutes while you prepare the topping.
  4. For the topping, combine the corn syrup, 1/4 cup brown sugar, and 2 tablespoons butter in a small saucepan over medium heat. Stir constantly until the butter melts and the sugar dissolves.
  5. Bring the mixture to a gentle boil and cook for 1 minute, stirring occasionally. Remove from heat and stir in the 1/2 teaspoon vanilla extract.
  6. Allow the topping mixture to cool for 5 minutes. Stir in the remaining 1/2 cup of toasted pecans.
  7. Pour the warm pecan topping evenly over the chilled cream cheese base.
  8. Chill the dip for at least 1 hour before serving. Serve cold with graham crackers, apple slices, or vanilla wafers.

Notes

  • Toast the pecans lightly in a dry skillet over medium heat for 3 to 5 minutes until fragrant. Let them cool completely before using.
  • You can make this sweet holiday dip ahead of time; cover and refrigerate for up to 2 days. Let it sit at room temperature for 10 minutes before serving.
  • For dipping, graham crackers, apple slices, pretzels, and vanilla cookies work well with this pecan pie filling dip.
