You will make this easy roasted broccoli recipe weekly. It delivers perfectly tender centers with irresistibly crispy, caramelized edges using just a few simple ingredients. This is the best way to cook broccoli for a healthy weeknight vegetable side dish.

Ingredients

Scale
  • 1 large head of broccoli, cut into uniform florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). You need high heat for crispy roasted broccoli.
  2. Place the broccoli florets on a large, rimmed baking sheet. Do not overcrowd the pan; use two sheets if necessary to allow air circulation, which prevents sogginess.
  3. Drizzle the olive oil over the broccoli. Toss the florets with your hands until they are evenly coated.
  4. Sprinkle the salt, pepper, and minced garlic (or garlic powder) over the broccoli. Toss again to distribute the seasoning.
  5. Spread the broccoli into a single layer on the baking sheet.
  6. Roast for 15 to 20 minutes. Check the broccoli at 15 minutes. You are looking for tender centers and deeply browned, crispy edges.
  7. Remove from the oven and serve immediately as a quick sheet pan broccoli side dish.

Notes

  • For Parmesan roasted broccoli, sprinkle 1/4 cup of grated Parmesan cheese over the florets during the last 5 minutes of roasting.
  • For roasted broccoli with lemon, squeeze the juice of half a fresh lemon over the hot broccoli immediately after removing it from the oven.
  • If you use frozen broccoli, do not thaw it; pat it very dry with paper towels before tossing with oil and seasoning.
