1 tablespoon vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
1 cup broccoli florets
1 cup sliced carrots
1/2 cup water or beef broth
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
1 teaspoon ground ginger
Pinch of red pepper flakes (optional)

Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground beef to the skillet. Cook, breaking it apart with a spoon, until browned. Drain off any excess fat.
Add the chopped onion and cook for 3 minutes until softened.
Stir in the minced garlic, broccoli florets, and sliced carrots. Cook for 3 to 4 minutes, stirring often, until vegetables begin to soften slightly.
In a small bowl, whisk together the water or beef broth, soy sauce, brown sugar, cornstarch, ground ginger, and red pepper flakes (if using).
Pour the sauce mixture over the beef and vegetables in the skillet.
Bring the mixture to a simmer, stirring constantly, until the sauce thickens, about 1 to 2 minutes.
Remove from heat. Serve immediately over cooked rice if desired.
Notes
For a lower fat option, use 93% lean ground beef.
If you do not have cornstarch, you can use 1 teaspoon of flour to thicken the sauce, though the texture will change slightly.
